About SELEGINI

What is SELEGINI?

SELEGINI is a brand of Georgian-style cheese made in the Czech Republic. The cheeses are developed from Georgian cheesemaking know-how and produced to European food-safety standards. Our brand line is "Georgian Tradition – European Quality".

Who makes SELEGINI cheese, and where?

SELEGINI s.r.o. is a Czech company based in Prague (Kaprova 14/13, 110 00 Praha 1, company ID 23016973). The cheese is produced in Domažlice in the Czech Republic and shipped from there.

Where can I buy SELEGINI cheese?

Directly in this online shop. We ship chilled parcels to private customers in the Czech Republic, Germany, Poland, Austria, Slovakia, Hungary and other EU countries. Restaurants and shops can order wholesale (see below).

Our cheeses

Which cheeses can I order right now?

  • SELEGINI Traditional: our classic Sulguni-style stretched cheese, in 400 g and 1 kg packs.
  • SELEGINI Khachapurian: an Imeretian-style cheese made for khachapuri, in 400 g and 1 kg packs.

SELEGINI Amber, our cold-smoked Sulguni-style cheese, in 400 g and 1 kg packs.

What is the difference between Traditional and Khachapurian?

SELEGINI Traditional has an elastic texture, a balanced milky taste and pleasant saltiness. It works cold on a cheese board and hot on the grill or in a pan. SELEGINI Khachapurian is softer and milder, and it melts evenly, which makes it the cheese to bake with.

Which cheese should I use for khachapuri?

SELEGINI Khachapurian was developed for this. It works for Imeretian khachapuri (cheese-filled round bread) and Adjarian khachapuri (the boat-shaped bread with egg and butter). For a filling that stretches more, many cooks mix it with SELEGINI Traditional.

Is SELEGINI the same as sulguni or imeruli cheese from Georgia?

SELEGINI cheeses are Georgian-style cheeses made in the Czech Republic. They follow Georgian cheesemaking traditions and suit the same dishes, but they are produced in Europe and sold under their own names: SELEGINI Traditional, SELEGINI Khachapurian and SELEGINI Amber.

What sizes are available, and who is the 1 kg pack for?

Traditional and Khachapurian come in 400 g and 1 kg vacuum packs. The 1 kg pack costs less per kilogram and suits families who cook Georgian food often, as well as restaurants, bakeries and caterers.

What does the cheese contain? Which allergens?

SELEGINI cheeses are made from milk, so they contain milk. The full ingredient list and nutrition values are printed on each pack.

How long does the cheese keep, and how should I store it?

Keep it refrigerated at +2 °C to +6 °C. Unopened, Traditional and Khachapurian keep for up to 21 days and Amber for up to 90 days. The exact best-before date is on each pack. Once opened, keep the cheese wrapped in the fridge and use it within a few days.

Do you use preservatives?
No. SELEGINI cheeses are made without added preservatives. Their shelf life comes from careful production, vacuum packing and constant refrigeration at +2 °C to +6 °C, which is why they keep for up to 21 days unopened.
